I've got a 5.1 home theater setup. Will a “Stereo' blu-ray player only play two channels, or am i confused?

Current Setup:
1000 Watt 5.1 Samsung System with built-in “upscale” DVD player

I want to purchase a Blu-Ray player, but I'm confused because all the ones I'm finding are either [Stereo Out] or they're the Blu-Ray version of the receiver that I currently have, speakers included.

Will the stereo out ones (80-100 bucks) produce 5.1 sound, correctly, or must I shell out the higher cost for the receiver with a built-in Blu-Ray ?
