Is is possible to use custom headphones with an iPod Touch?

I've recently been thinking of buying a 32GB iPod Touch. I've looked at many reviews, but I can't seem to find any information about if you can use headphones other than the ones provided with the iPod [I have odd shaped ears and so am quite picky about headphones]. I have some great ones that I use normally, and it'd be great if I could use them with the iPod.
